No-one knows the terroir of Shinshu Ueda better than the brewers who turn locally-grown rice into sake, embodying the interactions between man and nature that have long shaped the cultural identity of the region.

Shuhei Otsuka is both a chef and a brewer, one of the team who make Shinshu Kirei. He knows its flavors and texture by heart, and showcases them through careful selection of seasonal ingredients.
He aims to communicate the geography and culture of Shinshu Ueda to his guests through skillful combinations of local sake and local food.

The Okazaki Brewery in Yanagimachi is on the old Hokkoku Kaido road that once brought travelers from the northwestern coast of Japan through the Shinshu Ueda region as they traveled east to the Kanto area.
The brewery takes water from the Sugadaira highlands and rice grown in Nagano Prefecture to carefully and gracefully craft sake that opens up moments of pleasure for drinkers to enjoy sip by sip. And each serving of sake in your cup is a perfect reflection of the geography of Ueda, nestled in a river valley cradled by mountains.

Five sake and five shapes

Imagine five flowers: gentian, Japanese quince, swamp lantern, camellia, morning glory.
And five types of Shinshu Kirei sake poured into five flower-shaped vessels, or the same shape but made of different materials such as porcelain or glass, to create infinite combinations of the special characteristics of a substance with the meaning of a form.
